Veggie Pot Pie Recipe

Lately at our house we have been going meatless for several different reasons.  We just really haven't wanted to buy non-organic chicken, or non grass fed beef mostly because of how expensive it is.  So until daddy comes home with a big deer for our freezer its meatless for us!

I just created this the other day with veggies on hand but you can substitute anything for the ones I used!  That is the great thing about cooking you can use up what you have or what is about to go bad.  In culinary school we learned that the best chef is the one who is throwing away nothing, so go with this theme and get rid of your veggies you are about to toss or you can use frozen ones like I have here.

On with the good stuff! 

What you will need:

  • 2 medium sized potatoes-peeled and diced medium
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 cup frozen broccoli
  • 1 large onion-sliced here but would be good diced too!
  • 2/3 stick butter
  • 1 1/2 cup chicken stock
  • 1 cup milk
  • 1/3 cup flour (more as needed
  • One can of biscuits (what ever you have or you can make your own crust!)
  • salt and pepper to taste
  • Texas Pete to taste
  • A casserole dish

Directions:

Preheat oven to 350 degrees F


Fill a medium sized pot with water and when it starts to boil put diced potatoes in.  Let them boil for about 10 minutes (they should be soft).  If you are using fresh carrots, broccoli put them in at the same time as the potatoes.



After potatoes are soft add frozen veggies (or just peas if you are using fresh as mentioned above).  Cook for about 5 mins just until heated through.  Drain veg's and set aside.



In another medium size pan heat the pan then add the 2/3 cup butter until melted.



Add the onion to the pan and cook until it is translucent.


 
Next you are going to make a roux (mixture of flour and butter) simply add the flour to the pan of onions and butter then stir and let it cook for a few minutes just keep stirring.  Once it has had a chance to cook a little add the milk and the chicken stock at the same time.
 
You are going to keep stirring until it starts to gently boil and thicken (have the heat on med-high) being careful not to scorch the milk.  The sauce will thicken as you can see in the right bottom picture.
 
 
Now add the onion and sauce mixture to the veggies and place them in the dish you will be using.  Also, put the salt and pepper and texas pete here.  I placed my dish on a sheet pan in case of dripping which did happen!
 
 
Here's the hard part (not) take the biscuits and mash them around a little to flatten them.  Place them around the top of the pie.  Now you are ready to put it in the oven!  I baked mine in my toaster oven which is convection and it took about 30 minutes for the biscuits to get brown on top. 
 
 
Now hubby wasn't sure when I told him what we were having that night but when he went back for seconds I knew it was a hit!
 
 
 
 
Like I mentioned before you may use any veggies in this dish anytime you cook you can change out ingredients that's the joy of cooking!
